• 5 green peppers
  • 2 large onions
  • 2 small eggplants
  • 3 cloves of garlic
  • 200 gr. sausages
  • 600 gr. chopped tomato
  • 1 tsp sugar
  • 1 tsp tomato paste
  • 1 tsp chili flakes or 1 hot pepper
  • 1 glass white wine
  • olive oil
  • salt and pepper



In a pan with olive oil sauté the onions, garlic and peppers.

Then add the eggplants and sausages cut into slices and mix until browned.

Add the white wine and wait 1-2 minutes for the alcohol to evaporate.

Add the tomatoes, salt, pepper, sugar and tomato paste.

If we want to make it spicy we add the hot pepper or chili flakes.

Allow to cook for 30 to 40 minutes. Serve with fried potatoes and chopped parsley.
