Fish Croquettes in roast pepper sauce for 4 people

  • 500 gr. fillet of fish (salmon, cod or perch)
  • 1 onion, finely chopped
  • 2 eggs
  • 4 slices of toast
  • 1 bunch parsley, finely chopped
  • salt and pepper
  • sunflower oil for frying

For the batter:

  • 1 cup flour
  • 1 cup fine semolina
  • 2 eggs

For the roast pepper sauce:

  • 2 roasted red peppers
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dry basil
  • salt

Chop the fish and mix with onion, slices of toast, eggs, parsley, salt and pepper.

Leave the mixture in the refrigerator for about 2 hours.

Mold like burgers and batter the croquettes with flour, egg and semolina.

Fry in sunflower oil over high heat. Drain well on absorbent paper and serve with roast pepper sauce,

which we make by beating all the ingredients together in the blender.

Full July noon…
even if olive groves didn’t exist…
I would have invented them.
